I went to Trader Joe’s this weekend and discovered their spicy chile lime seasoning. I don’t even like watermelon, but I ate like an entire watermelon adorned with this salty, spicy seasoning. Pure heaven. I was inspired. I needed to add this spice to everything. My world just made more sense with chile lime salt in it. Shrimp. It would taste good with shrimp, I decided. It would taste even better if that shrimp was basking in the close company of its tropical friend, mango. And so it came to be…shrimp tacos with mango slaw and a creamy baja sauce.
2 pounds Shrimp
Chili Lime Seasoning, to taste (I coated generously)
2 TBSP Olive Oil
Juice of one lime
1 clove garlic
1/4 cup mayo (I use the avocado mayo from Costco)
1/4 cup unsweetened Greek yogurt
2 cloves garlic
zest of 1 lime
1.5 TBSP lime juice
1 mango, peeled and diced
1 cucumber, diced
1/2 onion, finely chopped
1 bell pepper, diced
1 clove garlic, finely chopped
2 TBSP lime Juice
2 TBSP Cilantro, chopped
Cabbage or lettuce for added crunch
Cheese–if you do cheese
Salsa or Tapatio
Mix your baja sauce and set aside so flavors begin to meld.
Devein shrimp and place in a mixing bowl with 2 TBSP olive oil, garlic, lime juice and seasoning.
Prepare the mango salsa by chopping and tossing with lime juice and salt.
Place shrimp and marinade in pan and cook shrimp until pink on both sides.
Heat your tortillas, and make your taco however you damn well please.
