This salad is totally everything that is trendy right now…hence the name: Hipster Quinoa Salad. You will be a little more awesome…a little more ironic…dare I say it? A little more hip. Yep, wear your feminisit t-shirt and take a selfie as you enjoy this medley of protein-packed quinoa, kale, herbs and veggies.
I make a big batch so that I can have it for a few lunches. It really is satisfying and delicious.
2 cups quinoa
4 cups bone broth
1/2 onion, diced
2 cloves garlic, finely chopped
5 sprigs of parsley, finely chopped
1 cucumber, diced
1 red pepper, diced
2 cups of kale, chopped
Juice of one lime
salt to taste
In medium saucepan, combine quinoa and bone broth. Bring to a boil, stir, and then cover. Let simmer until liquid is absorbed (approximately 10 minutes). Turn off heat and let sit, covered for an additional five minutes. In large bowl, add red pepper, kale, garlic and onion. Add warm quinoa and mix. Let cool completely, then add cucumber, parsley, and lime juice. Mix and add salt to taste.
Variations: Options are limitless with this summer salad. You can make it vegan by cooking the quinoa in vegetable broth or water. The bone broth gives you an extra protein kick, which is why I use it in everything. I like to add pumpkin seeds, diced mango, or raisins for some added sweetness and crunch.
