5- Ingredient Chocolate Cashew Ice Cream

Serioulsy…you are required to make this.  You have no choice.  Eat it.  You’re welcome.

This ice cream is made with only five ingredients–all whole, delicious foods combined to make a glorious dessert treat that will leave your sweet tooth craving totally at bay.  This chocolate dessert is healthy, vegan, dairy-free, gluten-free, paleo, and you seriously would have no idea you are eating a healthy ice cream.  My husband has Chron’s disease, an auto-immune disorder, and he can’t handle dairy.  He has long been searching for a dairy-free ice cream alternative, and this did the trick.

Cashews are naturally sweet and creamy and they make the perfect base for a rad ice cream.  Did you try my cashew milk creamer?  That is yummy, too.

Have you ever tried to photograph ice cream in the desert sun?  I had like 30 seconds to capture a shot.  Impossible.  So, moral of this story–eat it quickly.

Healthy 5-Ingredient Cashew Ice Cream

Ingredients:

1-cup Raw Cashews

2-cups Water

3 Tablespoons Honey

1 Tablespoon Vanilla

1 cup dark chocolate

Chocolate chips as garnish (optional)

Directions:

Blend all the ingredients except the dark chocolate until well combined (1-2 minutes on high).  Then pulse in the chocolate.  Place in an ice cream maker.
