I almost always have leftovers from my whole chicken dinner. I shred the chicken and make these easy chicken salad lettuce wraps for lunch. They are quick and easy to make.

Ingredients:
Shredded chicken, 3 cups
Plain Greek Yogurt (unsweetened!!), 2 TBSP
Mayonnaise (I like this brand), 2 TBSP
Celery, 2 stalks–diced
1/4 cup onion, diced
1/2 cup cucumber, diced
Raisins, apples or other fruit (optional)
Salt and pepper, to taste
Lettuce and avocado
Directions:
In medium bowl, mix yogurt and mayo. Throw in shredded chicken and diced fruits and vegetables. Stir. Add salt and pepper to taste. Wash lettuce leaves and fill with chicken salad. Top with avocado.
