Here it is.  My first recipe.  As noted in my New Years Resolution post, food photography is not my forte.  While these pancakes look like alien turds, I’m telling you, they are quick, easy and tasty!  Give them a shot.  These are grain free, gluten-free and packed with protein to keep you full and get your day started right.

Super Mama Protein Pancakes

Serves 2

 

Ingredients:

½ cup cottage cheese

½ cup egg whites

1 scoop protein powder (I like Jay Robb’s Vanilla Whey protein)

¼ teaspoon cinnamon

¼ teaspoon of vanilla extract

Dash of salt

Coconut oil for frying

 

Directions:

Blend it up in a blender or food processor. Heat a tablespoon of coconut oil in a frying pan. Pour into small pancake shapes. Wait until your batter forms small bubbles and then flip it.

You can top it with anything. My favorite is Greek yogurt and a few berries. Butter and syrup is pretty delicious, but don’t go crazy on the syrup. Almond butter is super yummy. Sky is the limit.
